Linda’s Cinnamon Muffins

Ingredients

2 c. plain flour            

2 c. oat flour * (Linda grinds rolled oats in a food processor to make the flour)      

1 tsp. salt        

1 1/3 c. brown sugar   

4 tsp. baking powder  

½ tsp. baking soda     

2 tsp. cinnamon          

2 tsp. vanilla   

½ c. canola oil            

½ c. applesauce          

2 eggs 

2 c. whole buttermilk  

2 c. chopped apples

* Linda grinds rolled oats in a food processor to make the flour

Heat oven to 375 degrees. Grease muffin tins. Mix dry ingredients. Stir in apples. Make a well in the flour mix and add eggs. Lightly beat them within the well. Add wet ingredients to the eggs and mix all together no more than 20 stirs. Divide batter into 24 muffin cups. Bake for 17-20 minutes.

Yields 24 muffins

Optional Streusel

¼ c. sugar       

¼ c. flour        

2 tsp. cinnamon          

¼ c. cold butter

Mix with fork and add to top of muffins before baking.

Linda’s tip:

Do not over mix!
